My husband has very old Toshiba with Win 95 he refuses to 'give up.' But his
hard drive is SO FULL he's having trouble saving files, transferring files
and cannot load new software to manage same.

Any thoughts about how to EASILY / QUICKLY save/transfer all these files
before he loses everything and then really becomes impossible to live with?

If that machine has a CD-R, then you could dump the files onto a CD.
If it has a network card, you could use that to transfer them to
another computer or on-line storage site.

Other than that, I guess you could install a second hard drive. But
modern hard drives are so large, I don't think Win95 could use all of
a modern drive.
